This can be prepared the night before and popped in the oven the next morning. So simple, easy, and yummy, too! (Kids may prefer leaving the green chilies out, but I think that’s what makes the dish.)


1 1/2 dozen large eggs

1 pkg. (12 oz.) sausage

2 cups shredded cheese

1 small can diced green chilies


Brown the ground sausage in a skillet until thoroughly cooked. With a paper towel-lined strainer, drain the grease. Evenly place the crumbled sausage in a 9×13 baking pan. Spread the shredded cheese over the sausage. Layer the green chilies over the cheese. Slowly pour well-beaten eggs over everything in the baking dish. Cover with foil and place in a 375 degree oven for approx. 45 minutes. Remove the foil and bake 5-10 minutes more until it appears golden and the eggs are firm in the middle. Enjoy!

    We enjoyed this at your cabin this summer. So glad to have your recipe! I will say I think the green chilis are what makes it, especially if you are staying in New Mexico in the mountains!👍
