Ingredients:

(cake batter)

1/2 cup butter

1 1/2 cups sugar

2 eggs

2 cups sifted flour

1 tsp. baking soda

1/2 teaspoon salt

3 large bananas, mashed

1 cup nuts, chopped

Directions:

Preheat oven to 350. Cream butter and sugar. Add the rest of ingredients in the order given, mixing thoroughly. Pour into 2 greased 9″ round cake pans (or 2 greased loaf pans if you prefer baking bread). Bake 45 minutes for cakes, 50 minutes for breads. Check for done-ness when an inserted toothpick comes out clean. (These freeze very well if you want to make it ahead of time.)

Frosting for cake:

2 cups heavy or whipping cream

1/4 cup confectioners’ sugar

1/8 tsp. salt

1 tsp. vanilla extract

In small bowl with mixer at medium speed, beat the cream with sugar and salt until stiff peaks form; fold in vanilla extract. Keep frosted cake refrigerated until serving time. (Cake can be garnished with fresh banana slices dipped in lemon juice before serving to keep them looking edible!)
