Here’s a delicious bread that’s perfect for breakfast, or anytime. It really is best while warm and slathered in butter. Try it!

Ingredients: (Makes one large loaf.)

2 cups shredded zucchini 

2 eggs

1/4 cup sour cream 

1/2 cup canola oil

1 cup sugar

1 3/4 cup flour

1 tsp. baking soda 

1/4 tsp. baking powder 

1/4 tsp. salt

1 tsp. cinnamon

1/8 tsp. nutmeg

1 Tbsp. cinnamon sugar


In a bowl, whisk together the oil, sugar, eggs, and sour cream in order given.  

Add shredded zucchini and mix gently. 

In another bowl, whisk all remaining dry ingredients, except the tablespoon of cinnamon sugar. 

Fold dry ingredients into the wet ones and stir just until everything is moistened. 

Pour into one greased loaf pan. Sprinkle the top with 1 Tbsp. cinnamon sugar. 

Bake for 50 minutes in a 350 degree oven. Let cool 10 minutes, invert bread from loaf pan and enjoy!
