Honey Butter Ambrosia

I found this recipe on Pinterest, posted by Jill Nystul from One Good Thing by Jillee.

It’s vegetarian, gluten free, serves 30 and is WAY better than just plain ole honey butter. Silky smooth and so good on freshly baked bread or toast.  Try it and you’ll definitely agree. 

5 Ingredients:

1 cup honey

1 cup sugar

1 cup heavy cream

3 sticks softened butter

1 tsp. Vanilla extract

Directions:

Combine sugar, cream, and honey in a saucepan and place on medium high heat. Stir the mixture well until it comes to a boil.  Boil for one minute, and remove from heat.

Put the softened butter in a blender or food processor.  Add the hot sugar mixture over the butter and blend until well mixed. Add the vanilla and blend again.

Pour the mixture into airtight containers. (This amount fills 2 1/2 pint jars.) Keep refrigerated.  It stays fresh for 6 weeks in the fridge or a few months in the freezer.
