Looking over the previous recipe posts, I realized the majority of them were baked items, so today I thought we’d try a salad instead! It’s loaded with flavor and the nice thing about the broccoli salad, besides being healthy, is that you can change up the ingredients according to your taste. Use pepitas or almonds (instead of sunflower seeds) if you prefer, reduce the bacon, or change the cranberries to cherries or raisins. If you don’t want the mayonnaise, substitute Miracle Whip or increase the yogurt. It’s whatever you want. So quick and easy to put together! 8 slices cooked crisp bacon, crumbled into small pieces
1 broccoli head, cut in bite-sized pieces
1/2 cup dried cranberries
1/3 cup diced red onion
1/2 cup mayonaise
1/2 cup sunflower seeds
1/4 cup goat cheese (or feta)
1/4 cup plain yogurt
Mix all 8 ingredients together and serve. That’s it. Enjoy!
